  1. In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5–10 minutes, until foamy.
  2. Add olive oil, flour, and salt. Mix until a soft dough forms, then knead for about 5 minutes until smooth and elastic. Add flour as needed if dough is sticky.
  3. Place dough in a lightly oiled bowl, cover, and let rise in a warm spot until doubled, about 1 hour.
  4. Punch down dough and divide into 10–12 equal pieces. Roll each piece into a rope (about 6 inches long) and tie into a knot. Place knots on a parchment-lined baking sheet.
  5. Cover loosely and let rise 20–30 minutes while preheating the oven to 400°F.
  6. Bake for 12–15 minutes, or until lightly golden brown.
  7. Meanwhile, melt butter in a small saucepan and stir in minced garlic, parsley, and Italian seasoning. Brush over warm knots right after baking. Sprinkle with Parmesan if desired.
